About once a month, I tell my roommate that I'm going to get scurvy. Although I am not a pirate sailing on a ship in the fourteenth century without any fresh produce, sometimes I realize that I just haven't been eating too many veggies! So, whenever I'm feeling particularly scurvy-ish, I make this crazy easy meal.
Ingredients:
- Cooked pasta (any shape works)
- A jar of your favorite marinara sauce
- 1-2 cloves of garlic
- 1 cup of spinach (frozen or fresh, either works)
- A dash of red pepper flakes
Instructions:
Boil your pasta according to the directions on the packaging. Once cooked, drain the pasta and leave it in the colander. Meanwhile, in the same pan that you cooked the pasta in, add a tbsp of EVOO and your minced garlic and red pepper flakes. Once fragrant, add the spinach and let it wilt down. After it's wilted, add your marinara sauce, let the sauce simmer for a few minutes, and it's ready to be eaten! Serve with fresh parmesan, and boom! No more almost-scurvy!
